Pontos de Açúcar&lt;/strong&gt;, tão&lt;br /&gt;importantes na elaboração de certas receitas, mas antes um &lt;strong&gt;importante alerta&lt;/strong&gt;:&lt;/blockquote&gt;&lt;/div&gt;&lt;div align="center"&gt;&lt;/div&gt;&lt;div align="center"&gt;&lt;span style="font-size:130%;"&gt;&lt;strong&gt;Atenção&lt;/strong&gt;&lt;/span&gt;: manusear açúcar em calda pode resultar em queimaduras graves, uma vez que o açúcar atinge temperaturas superiores ás da água a ferver - só para ter uma ideia, o ponto mínimo do açúcar (Ponto de Pasta ou Calda Fraca), atinge uma temperatura de &lt;strong&gt;101º&lt;/strong&gt;, enquanto o Ponto de Caramelo pode atingir os &lt;strong&gt;150º!&lt;/strong&gt;&lt;/div&gt;&lt;div align="center"&gt;&lt;/div&gt;&lt;div align="center"&gt;&lt;blockquote&gt;&lt;p&gt;Ao entrar em contacto com a pele, as caldas de açúcar "colam-se" à pele, e&lt;br /&gt;é por isso quase impossível não sofrer uma queimadura. &lt;/p&gt;&lt;p&gt;Muito cuidado com os salpicos ao mexer.&lt;/p&gt;&lt;p&gt;Muito cuidado com uma fervura alta e borbulhante.&lt;/p&gt;&lt;/blockquote&gt;&lt;/div&gt;&lt;br /&gt;&lt;div align="center"&gt;&lt;strong&gt;Nota importante: Dissolva sempre o açúcar na água antes de levar ao lume.&lt;/strong&gt;&lt;/div&gt;&lt;div align="center"&gt;&lt;strong&gt;&lt;/strong&gt;&lt;/div&gt;&lt;blockquote&gt;&lt;/blockquote&gt;&lt;div align="center"&gt;&lt;strong&gt;Como a maioria das pessoas não possui um termómetro de açúcar, ficam os tempos de preparação das caldas, mas também as temperaturas para os termómetros (Graduação Baumé). &lt;/strong&gt;&lt;/div&gt;&lt;div align="center"&gt;&lt;strong&gt;Não esqueça que a partir de uma certa temperatura, o açúcar passa de um ponto a outro com muita rapidez. &lt;/strong&gt;&lt;/div&gt;&lt;div align="center"&gt;&lt;strong&gt;Mantenha o lume brando, e vá-se certificando do ponto da sua calda.&lt;/strong&gt;&lt;/div&gt;&lt;div align="center"&gt;&lt;/div&gt;&lt;br /&gt;&lt;strong&gt;- Ponto de Pasta ou Calda Fraca&lt;/strong&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;250g açúcar&lt;/li&gt;&lt;li&gt;1.9dl água&lt;/li&gt;&lt;li&gt;&lt;strong&gt;Elaboração:&lt;/strong&gt; Ferver durante 2 minutos ( 32º Be / 105 ºC)&lt;/li&gt;&lt;/ul&gt;&lt;p&gt;&lt;/p&gt;&lt;p&gt;&lt;strong&gt;- Ponto de Pérola&lt;/strong&gt;&lt;/p&gt;&lt;ul&gt;&lt;li&gt;250g açúcar&lt;/li&gt;&lt;li&gt;1.2dl água&lt;/li&gt;&lt;li&gt;&lt;strong&gt;Elaboração: &lt;/strong&gt;Ferver até Ponto de Cabelo (+/- 2 min). Quando ao levantar a colher, escorrerem fios pouco resistentes, cujo a extremidade seja semelhante a uma pérola (tipo bolinha na ponta). ( 34º Be / 107 ºC)&lt;/li&gt;&lt;/ul&gt;&lt;p&gt;&lt;/p&gt;&lt;p&gt;&lt;strong&gt;- Ponto de Estrada ou Ponto de Fio&lt;/strong&gt;&lt;/p&gt;&lt;ul&gt;&lt;li&gt;250g açúcar&lt;/li&gt;&lt;li&gt;0.75dl água&lt;/li&gt;&lt;li&gt;&lt;strong&gt;Elaboração: &lt;/strong&gt;Atingido quando ao passar com a colher no fundo, a calda forma uma "estrada", deixando visível o fundo do tacho. ( 37º Be / 115 ºC)&lt;/li&gt;&lt;/ul&gt;&lt;p&gt;&lt;/p&gt;&lt;p&gt;&lt;strong&gt;- Ponto Assoprado&lt;/strong&gt;&lt;/p&gt;&lt;ul&gt;&lt;li&gt;250g açúcar&lt;/li&gt;&lt;li&gt;0.6dl água&lt;/li&gt;&lt;li&gt;&lt;strong&gt;Elaboração: &lt;/strong&gt;Está pronto quando ao mergulhar uma escumadeira de buracos na calda e soprar, se formem bolas que se desprendem como bolas de sabão. ( 38º Be / 117 ºC)&lt;/li&gt;&lt;/ul&gt;&lt;p&gt;&lt;/p&gt;&lt;p&gt;&lt;strong&gt;- Ponto de Espadana&lt;/strong&gt;&lt;/p&gt;&lt;ul&gt;&lt;li&gt;250g açúcar&lt;/li&gt;&lt;li&gt;0.6dl água&lt;/li&gt;&lt;li&gt;&lt;strong&gt;Elaboração: &lt;/strong&gt;Igual ao Ponto Assoprado, mas as bolas que se desprendem são mais fortes. Também é chamado de Ponto Voar Forte. ( 40º Be / 120 ºC)&lt;/li&gt;&lt;/ul&gt;&lt;p&gt;&lt;/p&gt;&lt;p&gt;&lt;strong&gt;- Ponto de Rebuçado ou Bola Mole&lt;/strong&gt;&lt;/p&gt;&lt;ul&gt;&lt;li&gt;250g açúcar&lt;/li&gt;&lt;li&gt;0.5dl água&lt;/li&gt;&lt;li&gt;&lt;strong&gt;Elaboração: &lt;/strong&gt;Está pronta quando se deita um pouco de calda dentro de um recipiente com água fria e se forma uma bola consistente mas moldável. (125 ºC)&lt;/li&gt;&lt;/ul&gt;&lt;p&gt;&lt;/p&gt;&lt;p&gt;&lt;strong&gt;- Ponto de Bola Rija&lt;/strong&gt;&lt;/p&gt;&lt;ul&gt;&lt;li&gt;250g açúcar&lt;/li&gt;&lt;li&gt;0.5dl água&lt;/li&gt;&lt;li&gt;&lt;strong&gt;Elaboração: &lt;/strong&gt;Está neste ponto quando se deita um pouco de calda dentro de um recipiente com água fria, e se forma uma bola muito resistente. (129ºC)&lt;/li&gt;&lt;/ul&gt;&lt;p&gt;&lt;/p&gt;&lt;p&gt;&lt;strong&gt;- Ponto de Caramelo&lt;/strong&gt;&lt;/p&gt;&lt;ul&gt;&lt;li&gt;250g açúcar&lt;/li&gt;&lt;li&gt;0.5dl água&lt;/li&gt;&lt;li&gt;&lt;strong&gt;Elaboração: &lt;/strong&gt;Está pronto quando o açúcar atinge uma coloração alourada, que vai escurecendo com o tempo de cozedura. Ao cortar o bolo, este é o aspecto final.&lt;/p&gt;&lt;br /&gt;&lt;br /&gt;&lt;p&gt;&lt;img id="BLOGGER_PHOTO_ID_5182622181882382226" style="DISPLAY: block; MARGIN: 0px auto 10px; CURSOR: hand; TEXT-ALIGN: center" alt="" src="http://1.bp.blogspot.com/_wMl9nIIYZ80/R-xfamwox5I/AAAAAAAAAKs/9ezxRndZLYw/s400/Bolo+Frutas.jpg" border="0" /&gt;&lt;/p&gt;&lt;br /&gt;&lt;br /&gt;&lt;p align="center"&gt;Neste segundo exemplo, conforme podem verificar já utilizei um creme para cobrir o bolo.&lt;/p&gt;&lt;br /&gt;&lt;br /&gt;&lt;p align="center"&gt;Aqui isso deveu-se ao facto de o bolo ser de frutos cristalizados e rum, ser um bolo confeccionado com muito pouco açúcar, e ter um travo ligeiramente amargo.&lt;/p&gt;&lt;br /&gt;&lt;br /&gt;&lt;p align="center"&gt;Como o que se pretendia era um contraste de sabores, o bolo foi coberto com um creme de leite condensado alimado (com sumo e raspas de lima), e coberto com glacê real.&lt;/p&gt;&lt;br /&gt;&lt;br /&gt;&lt;p align="center"&gt;Disso resultam 3 fases distintas ao se comer o bolo:&lt;/p&gt;&lt;br /&gt;&lt;br /&gt;&lt;ol&gt;&lt;br /&gt;&lt;li&gt;o crocante do glacê real&lt;/li&gt;&lt;br /&gt;&lt;li&gt;o crocante misturado com o doce do creme de leite condensado com lima&lt;/li&gt;&lt;br /&gt;&lt;li&gt;o amargo (agora mais ligeiro) do bolo em si.&lt;/li&gt;&lt;/ol&gt;&lt;br /&gt;&lt;br /&gt;&lt;p align="center"&gt;Só por curiosidade, e porque já me foi pedido várias vezes para mostar, este é o aspecto antes da cobertura de um dos nossos bolos:&lt;/p&gt;&lt;p&gt;&lt;img id="BLOGGER_PHOTO_ID_5182626322230855602" style="DISPLAY: block; align="left"&gt;375g de açúcar&lt;/div&gt;&lt;/li&gt;&lt;li&gt;&lt;div align="left"&gt;6 gemas&lt;/div&gt;&lt;/li&gt;&lt;li&gt;&lt;div align="left"&gt;3 ovos&lt;/div&gt;&lt;/li&gt;&lt;li&gt;&lt;div align="left"&gt;1.5dl de água&lt;/div&gt;&lt;/li&gt;&lt;/ul&gt;&lt;div align="left"&gt;Leva-se o açúcar ao lume coma água, até atingir ponto de pérola (ver post "Pontos de Açúcar).&lt;/div&gt;&lt;div align="left"&gt;Juntam-se as gemas com os ovos inteiros, e vão-se juntando colheradas de calda de açúcar mexendo sempre.&lt;/div&gt;&lt;div align="left"&gt;Junte á restante calda no mesmo tacho onde preparou, e leve ao lume brando mexendo sempre sem deixar ferver e com muito cuidado para não colar ao fundo, por cerca de 2 a 3 min.&lt;/div&gt;&lt;div align="left"&gt;Retire, e use para rechear
